Ingredients
For the Bread
- 2 cups (200 g) almond flour
- ½ cup (60 g) all-purpose flour
- ½ cup (100 g) granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 3 large eggs
- ¼ cup (60 ml) unsalted butter, melted
- 1 tsp vanilla extract
- ½ cup (120 g) plain Greek yogurt
- 1 cup (150 g) fresh blueberries
- 1 tsp lemon zest

- ¼ cup (35 g) sliced almonds
- 1 tbsp granulated sugar

Instructions
1. Prepare the oven and loaf pan
Preheat your KUCHT oven to 350°F (175°C). Grease a 9 × 5-inch loaf pan and line it with parchment paper, leaving some overhang on the sides for easy removal.
2. Combine the dry ingredients
In a medium bowl, whisk together the almond flour, all-purpose flour, sugar, baking powder, baking soda, and salt. This combination creates a tender texture while keeping the bread light and moist.
3. Mix the wet ingredients
In a separate large bowl, whisk the eggs, melted butter, vanilla extract, and Greek yogurt until smooth. Stir in the lemon zest.
4. Make the batter
Gradually add the dry ingredients to the wet ingredients and mix just until combined. Gently fold in the fresh blueberries, being careful not to overmix.
5. Prepare the blueberry bread for baking
Pour the batter into the prepared loaf pan and smooth the top. Sprinkle with the sliced almonds and granulated sugar.
6. Bake
