A classic American-style pear pie made with tender, buttery pastry and sweet, cinnamon-spiced pears. A simple homemade dessert that brings the flavors of fall to the table.

Ingredients
For the Pie Crust
- 2 ½ cups (315 g) all-purpose flour
- 1 tbsp granulated sugar
- 1 tsp salt
- 1 cup (225 g) unsalted butter, cold and cubed
- 6–8 tbsp ice water
For the Pear Filling
- 6 medium ripe but firm pears
- ¾ cup (150 g) granulated sugar
- ¼ cup (30 g) all-purpose flour
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 2 tbsp unsalted butter, cut into small pieces
For the Egg Wash
- 1 large egg
- 1 tbsp water

Instructions
1. Prepare the pie crust
In a large bowl, whisk together the flour, sugar, and salt. Add the cold butter and work it into the flour until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together.
Divide the dough into two equal portions. Shape each into a disk, wrap, and refrigerate for at least 30 minutes.
2. Prepare the pear filling
Peel, core, and slice the pears. Place them in a large bowl and toss with the sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Set aside for 10 minutes to allow the flavors to combine.
3. Assemble the pie
Preheat your oven to 400°F (200°C).
On a lightly floured surface, roll out one portion of the dough into a 12-inch circle. Transfer it to a 9-inch pie dish, gently pressing it into the bottom and sides.
Pour the pear filling into the crust and dot the top with the pieces of butter.
Roll out the second portion of dough and place it over the pears. Trim the edges and crimp them together to seal. Cut several small slits in the top crust to allow steam to escape.
4. Add the egg wash
Whisk together the egg and water. Lightly brush the top crust with the egg wash.
5. Bake
Bake at 400°F (200°C) for 20 minutes. Reduce the oven temperature to 350°F (175°C) and continue baking for another 35–45 minutes, or until the crust is golden brown and the filling is bubbling.
If the edges begin to brown too quickly, cover them loosely with aluminum foil.
6. Cool and serve
Allow the pie to cool for at least 2 hours before slicing so the filling has time to set. Serve at room temperature or slightly warm with vanilla ice cream.
